So…. today is National Pancake Day at IHOP! Yay! I hope everyone that lives near an IHOP takes advantage of their very generous offer! And speaking of pancakes, my 2 yr old has been STUCK on having pancakes for breakfast the last few weeks! So, I have been trying different things to flavor them in different ways for her. I bought some boxed pancake mix that already had chocolate chips in it and she really likes that, so the other morning I decided to add some peanut butter into the mix and give that a whirl. She loved it… it was kind of like having a Reese’s pancake, ha ha! It was a chocolate peanut butter pancake! I’ve been trying to come up with other ideas for her as well… I have some ideas that I am going to share (but please keep in mind that I have NOT tried all of these yet, so please don’t blame me if it doesn’t turn out so well!), but I also wonder about some awesome ideas from others! I would love to hear how you like to eat your pancakes! It could be add-ins to the batter, syrups, or other toppings! I would greatly appreciate any ideas that you are willing to share with me! Ok, that’s all that comes to mind this morning… I really need to learn to make lists! I come up with cool ideas all the time and think I’ll remember them and then I don’t when the time comes! I will come add on to this post if I remember some of the others that I have come up with, but please share your ideas with me! My 2 yr old would greatly appreciate it!

I never use bottled syrup on my pancakes. I usually make a tub of fresh fruit bit-sized pieces like strawberries or melon, add some sweetener -, cover tightly and refrigerate over night. In the morning I spoon a generous helping over the pancakes and the juices come naturally. Sometimes I add whipped cream.
