Slow-Cooked Pepper Steak

I cooked this recipe the other night for my family and I must say, we loved it!  It was super easy and tasted so yummy!  We chose to eat it over rice, but I would say that it would be equally good over noodles.  I cooked the recipe just like it says below with no changes.  If you decide to give this a try, let me know what you think!  Also, if you make any changes or additions, please let me know so that I can give them a try!

  1. 1 1/2 to 2 lbs. beef top round steak
  2. 2 tablespoons canola oil
  3. 1/4 cup soy sauce
  4. 1 cup chopped onion
  5. 1 garlic clove, minced
  6. 1 teaspoon sugar
  7. 1/2 teaspoon salt
  8. 1/4 teaspoon pepper
  9. 1/4 teaspoon ground ginger
  10. 4 tomatoes, cut into eighths or 1 can (16 oz.) tomatoes with liquid, cut up
  11. 1 large green pepper, cut into strips
  12. 1/2 cup cold water
  13. 1 Tablespoon cornstarch
  14. Cooked noodles or rice
  1. Cut beef into 3 in. x 1 in. strips. Brown in oil in a skillet. Transfer to a 3-qt. slow cooker. Combine the next 7 ingredients; pour over beef. Cover and cook on low for 5 - 6 hours or until meat is tender. Add tomatoes and green pepper; cook on low for 1 hour longer.
  2. Combine the cold water and cornstarch to make a paste; stir into liquid in slow cooker and cook on high until thickened. Serve over noodles or rice.
