Cheesy Smoked Sausage & Potato Casserole Recipe

We had this for dinner last night (hubby cooked!) and it was so YUMMY!  I recommend everyone try this and come back and tell me what you think!  We are meat lovers, so I think when we make it again we will add more smoked sausage and possibly a little more Velveeta (I’m a cheese LOVER!) but the recipe is completely awesome just as it is!  This is another recipe that I found floating around on Facebook, so I’m not sure who to credit for the recipe or the picture… but thank you to whoever you are!

Cheesy Smoked Sausage & Potato Casserole Recipe

Ingredients

  • 3 Cups potatoes (boiled, peeled, and cut into cubes when cool; approx. 1 lb.)
  • 4 Tbsp butter
  • 4 Tbsp flour
  • 2 Cups milk
  • 1/2 Tsp salt
  • 1/4 Tsp pepper
  • 1/2lb Velveeta cheese (diced)
  • 1/2 cup sharp cheddar cheese (shredded)
  • 1lb skinless smoked sausage
  • 1/8 Tsp paprika

Directions

Step 1
Cut skinless smoked sausage in half, lengthwise, and then chop into 1/2 inch "half moon" cuts. Cook in a frying pan for about 15 minutes, turning frequently to SLIGHTLY brown.
Step 2
Meanwhile, put cooked & diced potatoes in 2 quart casserole. Add cooked meat and give it a gentle toss.
Step 3
Mix all remaining ingredients (except for shredded cheddar cheese & the paprika) in a saucepan over medium heat until warm, melted and smooth. (Use a whisk and stir constantly.).
Step 4
Pour white/cheese sauce over potatoes and meat. Sprinkle shredded sharp cheddar cheese on top, and then sprinkle paprika evenly over the top.
Step 5
Bake in preheated 350°F oven for 35-45 minutes (watch, until golden brown on top).
Step 6
NOTE: You can substitute: 1/2 lb. hot dogs, sliced into 1/2-inch slices OR 1/2 lb. ham diced into 1/2-inch dices OR 12 oz. can of Spam diced into 1/2-inch dices, instead of the smoked sausage.

  1. Don’t you just love it when hubby cooks?! This looks so easy-cheesy and would be great for a cold evening – which we are, unfortunately, still having! I could also see taking this to a potluck.

  2. OOh not only does it sound delicious with my favorite ingredients like smoked sausage & cheese, it looks dleicious too. What a way to go off my diet. It is worth it I’m sure. Will have to try this soon.

  4. We love this recipe in our family too… i’m now trying to adapt some of our favorites into freezer meals. Do you think the potatoes would freeze ok? I know they sell frozen potatoes.. and I have stew recipes with potatoes in it that you can freeze…. im just second guessing myself on this one and wanted someone elses opinion too. Thanks

    • Hi Connie! Glad to see you love this recipe too… we eat it pretty regularly! Yes, the potatoes will freeze and thaw just fine. I have personally frozen it and thawed it out later and it was just as yummy as the first go-round. I need to start working more on some freezer meals myself… right now my freezer meal plan consists of freezing leftovers for another time, ha ha! Have an awesome night! Thank you for following!
