Banana Nut Cake With Cream Cheese Frosting

I just have to share this recipe with you guys!  This is absolutely one of the best cakes I have ever eaten!  It is very easy to make and it is super flavorful!  It is very moist too, which is a huge plus in my household.  Paula Deen outdid herself when she came up with this recipe.  I don’t think I have ever run across a recipe of hers that I have tried that I haven’t liked.  The next time I make it, I’ll try to take a picture of it for you.  The picture in the recipe below is courtesy of  The first time I made this recipe, I followed it to the letter except that I baked it in a bundt pan.  The second time I made it, I left the nuts out and just sprinkled some nuts over my own piece of cake after cutting it because my husband really loved the taste of the cake the first time but he got tired of picking out the nuts because he can’t chew them, ha ha!  I decided to leave them out for his sake the second time and it turned out just as well!  If you decide to give this cake a try, come back and leave me a comment and let me know what you think!  If you make any additions, deletions, or alterations, please let me know that as well!

  1. Butter, for greasing pans
  2. 3 cups all-purpose flour, plus more for pans
  3. 2 cups sugar
  4. 1 teaspoon baking soda
  5. 1 teaspoon ground cinnamon
  6. 1/2 teaspoon salt
  7. 3 eggs, beaten
  8. 3/4 cup vegetable oil
  9. 4 large ripe bananas, mashed
  10. 1 cup chopped pecans
  11. 1 1/2 teaspoons vanilla extract
For The Frosting
  1. 1 (8-ounce) package cream cheese, at room temperature
  2. 1/2 cup butter (1 stick), at room temperature
  3. 1 pound confectioners’ sugar, sifted
  4. 1 teaspoon vanilla extract
  5. 1/2 cup chopped pecans
  1. Butter and flour 3 (9-inch) round cake pans; set aside. Preheat oven to 350 degrees F.
  2. In a mixing bowl, stir together the flour, sugar, baking soda, cinnamon, and salt. Add the eggs and oil and stir just until the dry ingredients are moistened; do not beat. Stir in the banana, pecans, and vanilla. Divide the batter among the prepared pans and bake for 23 to 28 minutes, or until a wooden pick inserted in the center comes out clean. Cool the cake layers in the pans for 10 minutes, and then turn them out onto a rack to cool completely. While the cake cools, make the frosting.
For The Frosting
  1. In a bowl, blend together the cream cheese and butter. Gradually add the confectioners’ sugar and beat until light and fluffy. Beat in the vanilla. Stir in the pecans, or reserve them to sprinkle over the frosted cake. Fill and frost the cake when it is completely cool.
